      RAJASTHANI THAALI

      The princely state of Rajasthan is the land of Maharajas. In some provinces, entire meals are prepared with using only pure ghee, and includes lots of sweet dishes made from Mawa (condensed milk) fit for royalty. But the 3 main factors that influences Rajasthani cuisine are dry and arid landscape with scarce water supply, nomadic lifestyle in the desert and rivalries among small kingdoms in the region leading to constant war like lifestyles. So the food prepared would have to last for a few days or longer. Scarcity of water means fewer greens, hence, supplemented with easy to grow corn and squash like vegetables and legumes. A lot of dishes are yogurt based to sustain the extreme desert heat. Breads are generally made from millet or corn, for longer shelf life. Depending on the region or province, the dishes can vary from being extra rich to simple preparations.

      Tauri besan kadhi (Squash in chickpea flour soup)
      Rajasthani Chane ki daal (Split Bengal gram soup)
